Innovative AI 'Artificial Nose' Can Detect Meat Freshness

TEMPO.CO, Jakarta - Suryani Dyah Astuti, a professor at Airlangga University's (Unair) Faculty of Science and Technology, invented an AI-based device for detecting food freshness. AE-Nose, also known as Aenose, was born from Suryani's interest in the Electronic Nose (E-Nose), created by researchers at Gadjah Mada University (UGM) for the early detection of the novel Coronavirus (COVID-19).

"We are interested in applying an Artificial Nose that mimics how the human nose works, for use in early detection of food freshness," she said in a written statement on Sunday, December 24, 2025.

From the initial research, including with the inventor of the E-Nose, Kuwat Triyana, Suryani, and postgraduate students at Unair developed Aenose, which is equipped with a Taguchi gas sensor (TGS), as well as MQ sensors. These gas sensors work based on resistance changes due to exposure to certain gases. These sensors support food preservation detection.

Suryani added that this device can quickly determine the freshness level of meat. This innovation is also easy to carry or portable, and does not damage the material (non-destructive). "This sensor can classify not fresh meat as well as fresh meat with very high accuracy, which is 90 percent," she said.

The device's working mechanism is similar to the human sense of smell, which is subjective and can be influenced by health. The Aenose uses a sensor array system that detects various smells associated with meat metabolism or bacterial contamination. These scents are converted into electrical signals that are analyzed by AI to detect and classify the freshness of the meat.

Still Need to Import Components

Suryani acknowledges that the limited availability of components remains a major challenge. The Unair team still has to import electronic devices and sensors to assemble Aenose. "We have to put our heads together to be able to replace them with other components of the same or better quality," she said.

However, she ensures that efforts for downstream development are ongoing. The development of Aenose is currently being shared with PT Sarandi Karya Nugraha, which operates in the healthcare sector.

In addition to Aenose, Suryani stated that she is developing other innovations, such as Skinolaser, which accelerates wound healing after surgery and is currently in the clinical trial stage. There is also a laser innovation for fish farming.

She emphasizes the importance of developing a research roadmap to address real issues around us. "Interdisciplinary collaboration with the industry is also very valuable for opening up new perspectives and accelerating the innovation process," said Suryani.
